This is another of my favorite recipes taken from the Ultimate Reset. This recipe is for a single serving. I never make a single serving. The soup is great to have on hand and heat up quickly when you are too starved for preparation time. So, double… triple… quadruple the batch; that is after you’ve determined that you love it!

My little ones are not fans. Any bisque seems to be an acquired/adult taste. I’ll just keep encouraging my children to try a spoonful, and hope they come around!

 

What you need:

1 sweet potato
1/4 red bell pepper (note: I usually double the quantity of red pepper as I love the flavor it adds)
1 cup vegetable broth
1/4 tsp ground ginger (recipe calls for 1 teaspoon fresh ginger but I do not like the consistency or intense flavor)
1 1/2 tsp extra virgin olive oil
2 tsp miso paste diluted in tsp hot water (I skip this step, Miso Paste

Peel & cube sweet potatoes. Cook in boiling water until tender. Drain and set aside. Meanwhile, roast a whole red bell pepper on a gas stove top, grill or in the oven, (400 degrees 15-20 minutes); turning frequently until evenly charred on the outside.

Put the roasted pepper in a bowl and cover with towel for 10 minutes to steam. Clean off skin and seeds by running the pepper under cool water. Cut in quarters.

Place sweet potato, pepper, and broth into a blender. If you like a chunky soup, keep some of the potato out of the blender. Blend thoroughly adding more liquid to achieve desired consistency.

Transfer back to the pot and gently heat on low until hot. Add seasonings to taste.
