Pull out your Staple’s Easy Button because this is really, really simple; and yet always a big hit. My kiddos eat it, my guests compliment it & it’s sort of, kind of, healthy.

All you need is:
1. One box of pasta of your choice, (I prefer ditalini or medium shells)
2. Fresh Grape tomatoes (approximately 16 ounces)
3. A 6 oz can of medium black olives
4. Two large green belle peppers
5. Extra virgin olive oil

Preparation:
-Cook the pasta, drain, drizzle with olive oil and set aside.

While pasta is boiling:
– Cut grape tomatoes into halves or thirds depending on the size of the tomato.
– Slice black olives into rings, I prefer halves or thirds.
– Remove seeds and stem from the peppers and chop.
– Add the tomatoes, olives and peppers to your pasta.
– Salt & pepper to taste.
– Toss all ingredients together.
– Cover & put the salad in the fridge to cool.

YOU. ARE. DONE.

Made exactly as instructed, my kids love this pasta salad. Yet, it’s also a great base for a more adult version. The options are pretty much endless.

Feeling Italian? Get rid of the green peppers add fresh basil, fresh mozzarella cheese and a tiny bit of balsamic vinegar.

Love cheese? feta is a great addition. I bet Parmesan is good too… or yummy goat cheese…

Prefer kalamata olives? Use those instead or even a chopped olive mix.

Add chopped English cucumber to the recipe to increases the refreshing summer feel of the salad.

Finely chopped fresh spinach will add good nutrients.

What is your favorite spice? I personally LOVE dill. Preferably fresh, but I also frequently use dried dill.

I bet something wonderful could be done with a rasberry vinagrette, spinach, apples and goat cheese… but I’ve never tried it with pasta… and now I’m getting way off point and not so simple…
