– 1 large carrot peeled & chopped on the bias

– 1 zucchini chopped

– 1 large ripe tomato diced (I also like to use grape tomatoes halved and I use about 1/2 a container)

– 1 large cucumber diced (I like to use and English cucumber and I do not peel it – lots of good nutrients in a peel!)

– 4 tblsp chopped & pitted Kalamata olives

If I have a red onion on hand, I sometimes chop up a bit of that and throw that in as well. I wouldn’t do more than 1/4 of a large red/purple onion.

Toss all ingredients together and chill for an hour before serving.

 

I’ve done the Beach Body Ultimate Reset several times with fantastic results. I’ve also coached several people through the reset. I’ve never observed anyone lose less than 9lbs. The average I’ve witnessed is a 9-15lbs loss. The challenge is huge commitment, a lot of kitchen preparation time and a bit of an emotional roller coaster. The premis is to detox your body and eat whole organic foods. I can tell you that for 30 years allergies kept me from eating most fruits, (apples, fresh cherries, peaches, pears etc.) and many fresh vegetables. After the Ultimate Reset, I am now able to eat an apple every day and enjoy juicy fresh cherries without keeping an Epi Pen on hand. The value of that is immeasurable and the effort and commitment of time & money negligible in comparison to the benefits received.
