My children are not tremendous fans of your typical mashed and whipped butternut squash. So, when my husband came home from Costco with a big package of peeled, seeded & chopped butternut squash, I decided to try something new. And guess what? Everyone ate their veggies and only one under duress. I like to call that Success!

Not Yo Mama’s Butternut Squash:
Pre-heat oven to 400 degrees

  • Remove peel and seeds and chop squash into approximately 1/2 inch cubes as shown above
  • Place cubes in a casserole dish (I used a 9X13 glass)
  • Drizzle Olive Oil (y’all know I don’t measure so don’t ask how much… just drizzle. If I were a betting woman, I’d say between 1 & two tablespoons…)
  • Sprinkle Seasoned Salt to taste
  • Drizzle Honey (see above – probably about the same proportion)

Bake for about 30 minutes or until tender.
