Whenever I serve molasses sugar cookies, people tell me they are the best gingerbread they’ve ever had. They are not gingerbread. They are much better than gingerbread. And I’ll let you in on a little secret that goes wholly against the fitness persona of my blog… these cookies are best if you make a vanilla frosting sandwich with them. Shhhh…. it’s our delicious little secret.

Anyway, just work hard and earn your indulgence! After all, you should not deprive yourself; you must simply CONTROL yourself. Which is admittedly difficult for me when frosting, (or vodka), is involved.

Pre-heat oven to 375 degrees

3/4 cup shortening
1 cup sugar
1/4 cup molasses
1 egg
2 tsp. baking soda
2 cups flour
1/2 tsp. cloves
1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt

Mix together and beat well: shortening, sugar, molasses & egg.
Combine & sift the dry ingredients then add to first mixture (Beat until well mixed).

Roll into 1 inch balls (chill if necessary), then roll in sugar.

Bake for 8 minutes. Seriously EIGHT. MINUTES. ONLY. Even though they might not look done when you pull them out of the oven, they are. I think the biggest secret to making melt in your mouth, moist cookies is to NOT overcook them.

This recipe has been passed down through the generations of my family. Therefore, I don’t actually know who to credit. I can only tell you that I didn’t create this recipe.

Oh… and don’t bake without one of these. LIFE CHANGING!! If you don’t have one… put it on your Christmas list… or just buy it and label it “From Santa,” and act really surprised Christmas morning…
