I was struck with a stroke of kitchen genius today. That happens often when food supplies start to run low in my house. I like to pretty much empty out the fridge… so I can clean it before I restock. Problem being (or fortune dependent on perspective), when the fridge is close to empty: creativity is required.

Yesterday I posted the recipe for my favorite salad and vinaigrette dressing. The salad was on my mind because I had done the prep work to shred the radishes, carrots and jicama early in the week. Unfortunately, as of today: no more greens. Invention being the genius of necessity, I created Jicama Slaw. You will learn of me that all my measurements are loose. Food prep measurements that is… I try to keep my body measurements tight… thank you very much. I point this out simply so you feel free to adapt my recipes to your tastes. It’s an art, not a science y’all.

Jicama Slaw:

  • 2 cups shredded Jicama
  • 1 cup shredded radishes
  • 1 cup shredded carrots
  • About 1/3 batch of my favorite vinaigrette dressing (see below)
  • 1 tblsp red wine vinegar (optional – I like a vinegar bite to my slaw)
  • 1 tblsp olive oil
  • dash of extra salt and pepper

The last three ingredients are optional. If your slaw is “wet” enough with just the dressing or you’d rather just add more of the dressing: it’s your meal! My husband and I loved this quick side dish and I hope you do too!

I shouldn’t tell you this but, the wrap: it was delicious home-made chicken salad. Do as I say, not as I do? Anyway, I did 110 burpees today and they were only a small part of my work out, so I earned the indulgence!

Vinaigrette Dressing:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tsp salt
  • Fresh chopped basil about 1 tblsp
  • One clove crushed garlic
  • 1 tsp dill (fresh or dried)
  • 1/2 tsp black pepper
  • 1 tsp honey
  • 2 tblsp lemon juice (fresh is best but I’m not judging)

Mix well and serve.

Note that the vinaigrette recipe is supposed to be about 8 servings. Frankly, I’m lucky if I get four servings out of it!
